We value old-school techniques and ingredients because they’re honest. Our spirits are produced with raw materials that existed or were commonly traded in New England as far back as the 18th century.

We promote transparency by pioneering the voluntary disclosure of ingredients & serving facts on our bottle labels. We believe spirits should be thoughtfully made without additives, falsities or misleading practices.

THE TECHNIQUES

We use techniques such as open top fermentation for our single malt whiskey and fractional distillation for our gin to create nuance while balancing the artistic and scientific aspects of distillation.

There are no shortcuts or falsities, just research & time.

Wraith In The Goldmine

2 oz. Ship’s Bell Bourbon
0.75 oz. Lemon Juice
0.25 oz. Honey syrup
2 Dashes cardamom bitters

Combine all ingredients and shake. Strain into a rocks glass.

Garnish with chili oil, pepper flakes or a salt and smoked paprika rim.

Clipper Club

1 oz. Southwick's Gin
1 oz. Veritable Limoncello
0.5 oz. Lemon Juice
0.75 oz. Raspberry Syrup (equal parts raspberry jam & water)
10 drops 20% saline solution
2 Dashes Orange Bitters
1 oz. Club soda to top

Combine gin, limoncello, juice & syrup in a shaker tin & shake until well chilled. Double strain into a collins glass, add saline & bitters cthen top with club soda. Stir gently to incorporate then serve.

CAFE CABANA

1 oz. Real McCoy 3 Year Aged Rum
1/2 oz. Veritable Coffee Liqueur
1/4 oz. John D. Taylor's Velvet Falernum
1 oz. Fresh Brewed Espresso (or Cold Brew Concentrate)
3/4 oz. Pineapple Juice
1/4 oz. Cream of Coconut
1/4 oz. Lemon Juice

Combine all ingredients with cubed ice & shake until very cold.
Strain and serve up in a large coupe with a pineapple leaf garnish.

STRAWBERRY BLOND

2 oz. Veritable Limoncello
1 oz. Sancerre (or other dry) White Wine
1 tsp Sugar
2 Strawberries
1 Lemon Wedge

Muddle strawberries with the juice of one lemon wedge (~1/2 oz.) and a teaspoon of sugar in a mixing glass. Transfer everything to a tulip glass or champagne flute then top with ice, Limoncello and Sancerre.
